Vanilla Soufflé with a Chocolate ganache

Casually ignore, the fact that the sauce looks a bit suspect. I think I like white chocolate too much. I was happy with how it had risen, some of my classmates bombed their Soufflés (I did feel bad eventually).

Vanilla Soufflé with a Chocolate ganache


  • 125ml milk

  • 5ml vanilla essence

  • 4 separated eggs

  • 10g cake flour

  • 50g castor sugar

  • 10g butter

  • 10g castor sugar for dusting

  • 20g icing sugar

  • 100g chocolate

  • 150ml cream


  1. Grease the ramekins and dust with castor sugar.

  2. Scald the milk and vanilla essence

  3. Whisk the egg yolks, castor sugar and flour.

  4. Temper the egg mixture with the milk and return to the heat with a clean pot.

  5. Stir over medium heat until thick.

  6. Whisk the egg whites until stiff and fold into the egg yolk mixture

  7. Fill the ramekins with the Soufflé mixture, making sure it is level.

  8. Bake in a hot water bath for 15-20 minutes at 200C

  9. Scald the cream and add to the chocolate.

  10. Once the Soufflé is cooked, dust with icing sugar and pour ganache over it
